Check out the rice section in your local supermarket in Japan for other grains, and you’re often find zakkoku (雑穀) / kokumotsu (穀物), mixed grains and beans, which often includes millet. Millet is called awa (粟) or kibi (キビ) and is often sold by itself as uruchikibi (うるちキビ ) or mochi kibi (モチキビ).

Maccha Macadamia Cookie Recipe

At this point I should probably get a lawyer, because I’m about to get a ton of hate-mail from dietitians. As promised, I’ve cooked up a recipe involving two of my favorite things. Maccha (aka Matcha) and white chocolate macadamia cookies. If you like maccha lattes or really any snack with that wonderfully powdered green tea in it, you’ll love these. While not a traditional Japanese food item, I hope you’ll give them a try. If you do share a photo!

Ingredients

  • 2.5 cups (500ml) flour
  • 1 tsp (small spoon) salt
  • 1 tsp (small spoon) baking soda
  • 1 cup (200ml) unsalted butter (or about 200 grams)
  • .5 cup (100ml) white sugar
  • .75 cup (150ml) brown sugar (packed)
  • 1 tsp (small spoon) vanilla
  • 2 eggs
  • 1 cup (200ml) maccha
  • 1 cup (200ml) crushed macadamia nuts
  • 1 cup (200ml) white chocolate chips (or chopped bars)

Recipe

Pre-heat oven to about 350 F (180C). For best results use a baking sheet.

Cream butter and sugar, add in vanilla and eggs. Stir until well mixed. Add maccha. Next stir in flour, baking soda, and salt until well mixed. Stir in chocolate and nuts. The mixture will be slightly sticky.

Cover baking sheet with parchment paper. Form the dough into small balls about 1.5 inches in diameter and place them on the tray press them slightly to flatten. Ensure enough space so that they do not join after melting into circles.

Bake for about 10 minutes, or until they are golden brown. Baking time will determine if they are chewy or crunchy. Remove from oven and let them cool completely before removing from the parchment paper.

Makes a whole lot of deliciousness.

Fu ChanpuruAfter nearly five years living in Okinawa, my favorite food is still Fu Chanpuru.  While it might sound like part of a martial art, Fu is actually wheat gluten (so steer clear gluten intolerant people… sorry! you’re missing out).  In Okinawa, you can buy Fu in packages, either in long roles, or in more compact forms.  Fu is baked and dry, so you will have to hydrate it before use.

Ingredients

  • 72g Fu- gluten
  • 1 carrot cut into thin slices
  • 1 large onion
  • 1 packet mushrooms
  • 1 bell pepper, sliced
  • 1/2 small cabbage
  • 170g meat (sausage, pork, etc)
  • 3 eggs
  • 3tbsn soy sauce
  • 1tbsn garlic powder +extra
  • 1tsp salt
  • 2 packets dashi
  • 3 small chingensai plants, cleaned and chopped (optional)
  • water
  • 2tbsn Extra Virgin Olive Oil

Note: if you’re in Japan and sans raspberries, never fear! There are plenty of seasonal and local adaptations.

One of my go-to breakfast recipes is Heidi Swanson’s baked oatmeal (via Lottie & Doof). Extremely versatile, you can swap in any seasonal local fruit you like–in Japan, I often used persimmons, apples, or figs instead of bananas on the bottom; diced apples, raisins, or mikan mixed in when blueberries were out of season; and, best of all, it fit in a moven in a 20×20 cm (8×8 in) pan. The recipe will always remind me of my Kanazawa kitchen.

I’ve noticed a lot of people find my blog by searching for bamboo shoot recipes. This year, I wanted to develop a new recipe to add to the list and to make something other than bamboo-rice with the shoot I bought. My friend and temporary roommate mentioned that she had seen a bamboo and kabocha curry at a festival over the weekend….

The more I learn about cooking and food culture, the more I’ve become fascinated with cultural concepts of portable foods. As I’ve written before, Japan’s main example is onigiri, rice balls, but in the Shinshû/Nagano region, it’s oyaki, the steamed buns often made with savory fillings and soba-flour dough. Combine oyaki with another one of my favorite foods, kabocha, and you have a delicious, healthy addition to your bento that is easy to make and transport.

One hell of a storm blew through Saturday night and Sunday, ruining the weekend for hanami. Luckily, we’d had decent weather all week, including Friday night, when I went to Rojô Park in Komatsu for nighttime cherry-blossom viewing.

Of course, hanami wouldn’t be hanami without food and drink, and what better to bring than two Japanese classics together in a super portable form?

Advanced Chahan Recipe

ChahanBy far my most popular post on More Things Japanese is my easy recipe for Chahan.  This time around, I wanted to share a slightly more time-consuming, but even tastier recipe for those of you who love Chahan.  As with my advanced recipe for miso soup, it is all made from scratch, including the dashi. This take on Fried Rice is a mix of the local flavors I’ve learned on small Okinawan islands, and a bit of flair from me as well. I hope you enjoy.

Ingredients

  •  5 cups water
  • 1 piece conbu
  • 1 cup packed bonito flakes
  • 1/4 cup extra virgin olive oil
  • 1/2 onion
  • 170g sausage
  • 1 pack mushrooms
  • 1tsp salt
  • 1 carrot
  • 1 clove garlic
  • 1 package nirai
  • 1 cob fresh corn
  • 1/2 cup chopped green onions
  • 1/2 cup chopped nira (a scallion-like leaf)
  • 5 eggs
  • 1tbsp sake
  • 6 tbsp soy sauce
  • 1/2 tsp ginger
  • 2tbsp mustard
  • 2tbsp honey
  • 1/2 tsp pepper

Author’s note: Even though Minecraft isn’t Japan-specific, here’s proof that working with an oven range doesn’t have to limit your creativity!

This year, I made a Minecraft cake. If you aren’t familiar with Minecraft, I’ll let the website speak for itself: “Minecraft is a game about breaking and placing blocks. At first, people built structures to protect against nocturnal monsters, but as the game grew players worked together to create wonderful, imaginative things.”

Instead of creating a cake with a Minecraft design, we decided to create an interactive cake that our friend could build into her own Minecraft creation.

I used to refer to cauliflower as “broccoli’s sad cousin.” Years of veggie trays at family functions taught me that dip does not make raw cauliflower taste good. A month of a “let’s try new vegetables” experiment in high school taught me that no amount of cheese will make me touch boiled cauliflower. (Seriously. There are some things even cheese can’t fix.)

At some point last year, everyone on the Internet seemed to having a foodgasm about using mashed cauliflower as an alternative to mashed potatoes, and as I was snarking away*, my husband revealed that he likes cauliflower.

Whoa whoa whoa. Back up there.

One last(?) squash purée recipe for the season!

I live in a country where the only cold cereals available at regular grocery stores (Tokyo Metro, you don’t count) are frosted flakes and cocoa puffs.*  As a result, I’ve learned to make a variety of breakfast foods. I’m actually not sure how I only ended up with one muffin recipe on the blog onsidering the frequency with which we eat them at home. Muffins are the ideal food for the Japanese kitchen: their size means they cook through easily, unlike some quick breads; silicone muffin cups are easy to find; and the infinite variations you can make means you can adapt them to whatever flours (including gluten-free), milk, or seasonal fruit you can find in your area. Plus, they’re just fun to eat.

Thanksgiving Part 2 (at a friend’s house) went smashingly! I made Naturally Ella‘s Twice-Baked Butternut Squash (with quinoa and Gorgonzola) as the vegetarian main dish. With the exception of the turkey, which was expertly cooked by the hosts, all the other dishes were vegetarian: mac & cheese made with Cougar Cheese, a sharp canned cheese from Washington State (glorious); vegetarian cranberry-mushroom stuffing; fresh green-bean casseroles; vegetarian bean gumbo (spicy!); root vegetable purée; bourbon cranberry sauce made with reconstituted dried cranberries (and arcane magicks); and lots of pie: pecan, pumpkin, and chocolate.

Are you guys sick of kabocha and kabocha purée yet? I never am*, but let’s change it up a bit today.

My first encounter with a vegetarian cookbook of any sort was my dad’s copy of Anna Thomas‘s The Vegetarian Epicure, a memento of a few months in the ’70s when he dabbled in meatless cooking. I have no recollection of my dad (or my mom) ever using VE for anything but the cornbread recipe that we brought with us to every Thanksgiving dinner. I find vintage (sorry, parents) cookbooks really fascinating from a social-history standpoint, so perhaps I’ll peruse the book again when I’m home next.

A bowl of Fried Rice

Chahan is an Okinawan take on fried rice. Like many Okinawan dishes it is heavily influenced by Chinese cuisine.  Like Chanpuru, a similar category of Okinawa cuisine, Chahan’s basic flavor comes from a combination of soy, garlic, and dashi.  Since there are many ways to make or buy dashi, the final flavor of the dish, and the ease of its recipe can be changed depending on your approach.  Modern Chahan also often has an American influence in the addition of spam.  Below is a modern, yet quick take on this Okinawan dish.  It is by far my most popular post on MoreThingsJapanese.com.  I hope you enjoy my take on a classic Okinawan favorite.

Ingredients

  • 3 servings cooked white rice
  • 1 piman (green pepper)
  • 1 tamanegi (onion)
  • 1 package frozen vegetables
  • 2 large eggs
  • 170g meat (sausage, pork, chicken, spam, whatever)
  • 2 tbsp extra virgin olive oil or no-stick cooking spray

Seasoning

  • 1/4 tsp ginger
  • 2 tsp hachimitsu (honey)
  • 1 pkt dashi (5g)
  • 1 tbsp powdered or minced garlic
  • 4 tbsp soy sauce
  • 1 tbsp sake (cooking, mirin, awamori, nihonshu, etc)
