Position: Food Hall Support Manager

Description: A Japanese Entertainment Company is currently on the lookout for a full time, fully onsite Food Hall Support Manager to join their Downey, CA location. The Manager has a variety of responsibilities to ensure smooth operations of Food Hall/Central Kitchen and high standards in food service and Safety.

DOE and skills, the pay range for this position would be around the 74k-81k mark. This position includes great benefits such as medical insurance (100% covered by the company for both employees and family), vision & dental insurance. Also, PTO and 401k are included.

Your main responsibilities would include the following:

  • Learn the recipe and recreate the menu:
    • Learn the recipes of our franchise partners and do training until you are able to recreate the recipe in the U.S. (Max 6 month)
    • Prep-cook in the Central Kitchen and design the final cooking methods at the Food Hall while maintaining the consistent reproduction of the flavor of each menu item
    • Learn the recipes from a couple restaurants and conduct training for the store employees.
    • Optimize the store by managing food safety and maintaining and improving quality and cost management
    • Manage the menu based on the recipe standards and associated Japanese brand standards
    • Create the manual on how to cook & serve the recipes based on Japan
    • Participate in developing & improving the menu
  • Preparing and following up with Central Kitchen and Food Hall:
    • Support setting up, preparing cooking appliances, and cleaning the Central Kitchen and Food Hall.
    • Conduct cooking training and support daily tasks for Central Kitchen and Food Hall employees.
    • Follow food safety based on HACCP and conduct risk management.
    • Standardize cooking methods, perform quality checks for each cooking process to maintain high quality, and train staff members regarding using, repairing, and maintaining cooking appliances at the stores
  • Team management:
    • Cook following the authorized process, submit reports, and, if there are any issues, follow up with staff members and provide additional training to fix the issues
    • Attend business trips and adjust your work schedule for the Central Kitchen and Food Hall business
    • Increase productivity by educating and assigning staff members, developing a training system, and implementing the training program
    • Construct a working environment that facilitates high motivation and performance
  • Finance and budget management:
    • Plan the budget and submit the expenses for business trips and training
    • Maintain cooking facilities and financial management at the Central Kitchens and each Food Hall store, and report information to management
  • Business trips and communicating with Japan branch:
    • Ensure the quality of reproducibility by acquiring the recipes and cooking methods from training at our franchise restaurants in Japan (max 6 months)
    • Communicate regularly with the Japan branch and share the situation and progress of the local stores in the U.S.
    • Achieve smooth communication between local stores in the U.S. and franchise stores in Japan through the Japan branch
    • Share stores’ operation status, future tasks and improvement points to the Japan branch (which is in charge of managing franchises)
  • Following law and regulations:
    • Follow the laws and regulations regarding food safety and business in the U.S.
    • Provide and maintain a safe work environment for Food Hall and Central Kitchen employees – patrolling the stores regularly and making sure there are no issues at the stores and handling issues accordingly if there are any
  • Others:
    • Participate in other new projects actively, with quick responses to requests from upper management
    • Support future grand-openings and smooth store expansions by going on business trips across the U.S.

Please consider the following qualifications:

  • Food and Beverage industry experience preferred
  • Must have a bachelor’s degree or equivalent management experience
  • 5-10 years of managerial/project management experience preferred
  • Leadership, communication skill, problem solving ability, and flexibility
  • Experience in launching new projects preferred
